I made that rice and bean and lemon casserole a couple of weeks ago. Thought it was fabulous!

that is cool. We devoured it, and I realized one of the reasons was that we'd had so little white rice during the pandemic!

SAME. I finally gave up slow carb and am so excited to eat potatoes and rice again. Mostly I do brown rice, though. It makes me happy just to type that.
